When Kate was allergic to eggs I used one of these four choices most regularly in place of eggs in recipes. For sweet recipes and baking, I most often used the apple and banana substitutes. For savoury or other recipes where I didn’t want fruity or sweet flavours, I used the Flax Seed option.
1. Apple Sauce Egg Replacer
1/4 cup unsweetened apple sauce = 1 egg.
2. Banana Egg Replacer
1/2 banana, mashed = 1 egg.
3. Flax Seed Egg Replacer
- 1 tbsp. Ground Flax Seed (I use this Omega Nutrition Brand which is already ground or grind your own using a coffee grinder or other similar food processing appliance. When buying seeds always be mindful of the possibility of cross-contamination from nuts and contact the company to make sure your seeds are in fact nut-free)
- 2 1/2 tbsp room temperature water
Mix and allow to sit for 10 minutes + … you will see it becomes the consistency of egg whites! Amazing!
This is equivalent to one egg.
4. Store Bought Egg Replacer
You can find different kinds and brands at your local health food store or in the natural foods section of your grocery store.
