Dairy-free Chocolate Fudge

This is always a crowd pleaser! So decadent and delicious! If you’re allergic to peanuts or tree nuts but can have soy, I recommend using Wow Butter (Soy Butter). If you cannot have soy but can tolerate tree nuts or peanuts use your favourite nut butter (peanut, almond, etc.). You could also use Pea Butter or Sunflower Butter if you cannot have soy or nuts.

Ingredients

  • 1 ½ cups wow butter (soy) [OR safe nut butter depending on your allergens (peanut, tree nut) OR sunflower or pea butter
  • ⅓ cup melted coconut oil
  • ¼ cup maple syrup or honey
  • 1 tsp sea salt
  • ¼ teaspoon sea salt
  • ¼ cup cocoa powder
  • 1 tablespoon melted coconut oil
  • 1 tablespoon maple syrup or honey
  • Sprinkle of sea salt
  • 1/8 cup Enjoy Life Brand Dairy-Free Chocolate Chips

Directions

  1. Line a 9×5″ baking dish with parchment paper cut to fit the bottom.
  2. Combine the nut or seed butter with 1/3 cup melted coconut oil, 1/4 cup maple syrup, and sea salt. Blend thoroughly. Set aside 1/2 cup of the mixture to create the chocolate swirl. Pour the remaining mixture into the prepared pan.
  3. Combine the reserved 1/2 cup of mixture, cocoa powder, tablespoon of coconut oil and maple syrup or honey, and sprinkle of sea salt.Pour this into the baking dish and use a wooden skewer or tip of a sharp knife to create a swirl effect for the fudge.
  4. Melt the Enjoy Life dairy-free chocolate chips in the microwave. Drizzle the melted chocolate over the fudge.
  5. Cover the fudge with Saran Wrap or a lid if available for your dish and put it in the freezer for at least one hour to set the fudge.
  6. When ready to serve, remove from the freezer and use a sharp knife to slice the fudge into small squares. Eat promptly as this will melt quickly at room temperature. (Coconut oil turns to liquid at room temp).
