Strawberry Banana Muffins

These are great for breakfast or a snack. They are DELICIOUS and healthy! I love, love, love the combo of strawberry and banana.

INGREDIENTS

  • 2 overripe bananas – mashed
  • 3/4 cup rice milk (or other non-dairy alternative – we love coconut and oat milk also)
  • 1 whole egg + 1 egg white (or egg replacer for equivalent of 2 eggs)
  • 1/2 tsp vanilla
  • 2 cups oats (gluten-free if needed)
  • 1/3 cup brown sugar
  • 1 1/2 tsp baking powder
  • pinch of sea salt
  • 3/4 cup diced fresh or frozen strawberries (fresh is best!)

DIRECTIONS

  1. Preheat your oven to 350 degrees
  2. Mix all ingredients together in your stand mixer
  3. Line your muffin trays with parchment liners or lightly grease
  4. Divide prepared batter between 12 muffin portions
  5. Bake at 350 degrees for 25 minutes
  6. Allow to cool
  7. Enjoy!
