These are great for breakfast or a snack. They are DELICIOUS and healthy! I love, love, love the combo of strawberry and banana.
INGREDIENTS
- 2 overripe bananas – mashed
- 3/4 cup rice milk (or other non-dairy alternative – we love coconut and oat milk also)
- 1 whole egg + 1 egg white (or egg replacer for equivalent of 2 eggs)
- 1/2 tsp vanilla
- 2 cups oats (gluten-free if needed)
- 1/3 cup brown sugar
- 1 1/2 tsp baking powder
- pinch of sea salt
- 3/4 cup diced fresh or frozen strawberries (fresh is best!)
DIRECTIONS
- Preheat your oven to 350 degrees
- Mix all ingredients together in your stand mixer
- Line your muffin trays with parchment liners or lightly grease
- Divide prepared batter between 12 muffin portions
- Bake at 350 degrees for 25 minutes
- Allow to cool
- Enjoy!
