Delicious Date Squares

Kate and I just love the Date Squares at Sorelle, one of our favourite allergy-safe restaurants in Toronto. We decided to try to make our own at home and the results were FABULOUS! This is one of those things you may never have thought of making yourself but they’re truly easy to make and absolutely delicious! Enjoy!

Ingredients

  • 2 1/2 cups Medjool dates, pitted and chopped \
  • 1 cup water
  • 2 tbsp fresh lemon juice
  • 2 tbsp brown sugar
  • 1/2 tsp baking soda
  • 1 3/4 cups quick oats
  • 1 cup unbleached flour (or use oat flour or your favourite gluten free flour as a substitute if wanting gluten-free option)
  • 3/4 cup brown sugar
  • 1/4 tsp baking powder
  • 3/4 cup softened butter or dairy-free butter substitute for a non-dairy option (coconut oil works well or vegan margarine.

Directions

  1. Preheat the oven to 350 degrees. Line an 8″ square baking dish with parchment paper cut to fit the bottom.
  2. Combine the chopped dates, water, lemon juice and brown sugar in a medium sauce pan and bring to a boil. Add the baking soda once boiling and simmer for 5 minutes until dates are broken down. I then use a potato masher to make a chunky puree.
  3. Combine the dry ingredients in a bowl. Add the softened butter and mix until combined. Divide this mixture into 2 equal portions.
  4. Put half the oat mixture into the bottom of the prepared baking dish. Press it down slightly to make the square base.
  5. Spread the date puree evenly over top of the base.
  6. Top with the remaining oat mixture.
  7. Bake in the preheated oven for 55 minutes. Allow to cool before cutting into squares and serving.
