This is my GO-TO salad recipe whenever I’m asked to bring something along to a dinner party, bbq, potluck, etc. It is a recipe I found from Planet Organic Market and I’ve been making it now for years. We all love it! It looks like a lot of work with the chopping but I promise you, it’s not that bad and it’s worth it! What I love about this recipe is that it actually tastes even better the next day and the day after and that you can keep it in the fridge and serve it for the next few days as a side dish or have it as a healthy snack! Ingredients
- One bunch organic kale, washed and chopped
- 4 Carrots peeled and grated
- 1/2 head of purple cabbage, washed and chopped
- 1/2 cup raw sunflower seeds ***See notes below on buying seeds when you have allergies***
- 1/2 cup pepitas (shelled, raw pumpkin seeds) ***
- Splash Tamari (or use Bragg’s below if you don’t have Tamari- Tamari has a stronger flavour)
- 1/2 cup flax oil (I use Omega Nutrition brand)
- 1/3 cup Bragg’s Soy
- 5 tbsp balsamic vinegar
- 1 tsp dried oregano
***We have been using Go Raw brand seeds because they are labelled nut free. It is very difficult to find seeds that are not at risk of cross-contamination from nuts and peanuts. Be very careful if you have nut allergies and are using seeds in recipes to ensure that your seeds are nut-free!
Directions
- Combine first three ingredients in a large salad bowl.
- In a cast iron skillet roast pepitas and sunflower seeds over medium heat until toasty brown and fragrant – no oil needed – watch carefully, they go quick!
- Remove seeds from heat source and immediately add a splash of Tamari (or Bragg’s) and stir – let cool.
- Prepare dressing by mixing remaining ingredients (oil, Bragg’s, vinegar and oregano).
- Toss all ingredients together.
- Enjoy!
This salad tastes even better the next day! Similar to a coleslaw it holds up well for a few days in the fridge and can be prepared ahead of time. I love to bring this to parties or pot lucks. It always impresses!
