I decided to bust out my bread maker today and since I’m home sick with Covid, I have few groceries in the house so I just threw what I had together and the result was delicious! A perfect loaf for breakfast, snack time or as a dessert bread. I personally enjoyed it with a cup of tea on a January afternoon. Delicious!
INGREDIENTS
- 3 clementines-chopped (approximately 3/4 of a cup – 1 cup)
- 1/4 cup fresh cranberries (can substitute with frozen or dried)
- 1 1/2 tbsp butter (*or use non-dairy substitute (margarine or oil)
- 1 1/2 tbsp orange juice (I had a whole orange so I used fresh-squeezed oj!)
- 1/4-1/2 tsp orange rind (*optional)
- 3 tbsp sugar
- 3/4 tsp salt
- 2 cups bread flour
- 1 1/2 tsp yeast
DIRECTIONS
- Put all ingredients in order into your bread maker.
- Set to the small loaf size (1 or 1 1/2) and light crust. You can use the basic or sweet bread cycle. I used Basic.
