Taco Salad with Cilantro, Coconut, Lime Dressing

Making your own taco seasoning is easy and saves you having to buy a kit…it also allows you to control the ingredients, spice level, and avoid preservatives!

Ingredients


Taco Seasoning:

  • 1 tbsp chili powder
  • 1/4 tsp garlic powder
  • 1/2 tsp fine sea salt
  • 1/4 tsp dried oregano
  • 1/8 tsp ground black pepperl
  • 1 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper (adjust more or less to your liking – we like spicy so we do 1/4 tsp)
  • Cilantro, Coconut, Lime Dressing:

  • 1/4 cup cilantro leaves
  • 1/8 cup coconut milk
  • 1/4 cup olive oil
  • fresh lime juice from 1 lime
  • 1 tsp ground cumin
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • Salad ingredients:

  • Lean or extra lean ground beef
  • Romaine lettuce torn
  • Diced yellow pepper (can substitute with red or orange)
  • 1/4 avocado sliced or diced
  • Chopped red onion with sea salt
  • Diced cucumber
  • 1/4 cup fresh lime juice
  • Fresh cilantro leaves (optional)
  • 1/8 lime wedge for garnish
  • Corn tortilla chips
  • **Optional ingredients: Can add Monterey Jack or other cheese if dairy is not an issue or vegan cheese, black beans, corn niblets, diced tomatoes or cherry tomatoes, black olives sliced, etc. Whatever you like in your salad!

Directions

  1. Combine ingredients for salad dressing in food processor or blender and pulse/blend until smooth.
  2. Combine ingredients for taco seasoning.
  3. Brown beef in a large skillet over medium heat for approximately 7 minutes until cooked through, drain.
  4. Add taco seasoning to beef and 3/4 cup of water. Bring to a boil and then reduce to simmer, uncovered for 4-6 minutes or until most of the liquid has evaporated, stirring occasionally.
  5. Combine/arrange salad ingredients divided between serving bowls/plates.
  6. Top with prepared taco beef.
  7. Drizzle with the dressing.
  8. We like to squeeze more fresh lime juice (the lime garnish) overtop and add a few splashes of Frank’s Red Hot sauce to ours!
