The Allergy Mom’s Power Cookie

This is somewhere in between a cookie, a soft granola bar, a muffin and a breakfast food!   Chocked full of protein and absolutely yummy, these cookies will power you up for a hike, your school day or whenever you need some energy!  

*A note on the ingredients:  I often make these and use what I have available – sometimes I have coconut and sometimes I don’t.  Sometimes I use different seeds – such as pumpkin or sunflower seeds.   Sometimes I use brown sugar instead – or none!  Sometimes I use dried fruits and other times I use raisins.   Just keep the proportions and consistencies about the same and you should be fine to experiment with different combinations!

Ingredients

  • 1 1/8 cup quick oats
  • 1 cup Miller’s Pride or other whole wheat flour
  • 1/2 cup coconut flakes*
  • 1/8 cup flax seeds*
  • 1/2 cup hemp hearts*
  • 1/2 cup sugar
  • 1 tbsp cinnamon
  • 1 1/8 tsp sea salt
  • 3/4 cup Enjoy Life Brand Chocolate Chips
  • 1/2 cup dried berries or raisins
  • 1/8 cup water
  • 1/8 cup molasses
  • 1/2 cup milk or alternative – I used rice quinoa blend or coconut milk
  • 3/8 cup oil

Directions

  1. Preheat oven to 350 degrees.
  2. Line cookie sheet with parchment paper.
  3. Combine all ingredients until thoroughly mixed.
  4. Drop 1/3 cup spoonfuls onto cookie sheet and flatten.
  5. Bake 25 minutes or until lightly browned.
  6. Enjoy!  🍪
